Cherry Yum Yum
2 c. graham cracker crumbs
1 stick melted butter
1 8oz pkg cream cheese
¾ c sugar
1 c. milk
2 envelopes Dream whip
1 large can cherry pie filling
Mix graham cracker crumbs and butter. Spread half of graham mixture on bottom of pan; press. Mix together cream cheese, sugar, milk and dream whip : beat until stiff. Pour half of this dream whip mixture on top of graham cracker mixture, then add all cherry pie filling. Top with another layer of Dream whip mixture and sprinkle remaining graham cracker crumbs over all. Use a square 8x8 or rectangle casserole dish. The smaller the dish the thicker it will be Chill 2 to 4 hours.

Chocolate Brittle
Line a cookie sheet with foil. Put 40-45 saltines on foil. Meld 1 cup butter and add 1 cup brown sugar. Boil 2-3 minutes. Pour over crackers. Bake at 400 degrees for 5 minutes. Take out of oven and pour 1 bag of dark chocolate chips on top. Spread when melted. Top with chopped nuts.

Seafood Lasagna
9 lasagna noodles or NO Bake
2 jars Alfredo sauce
12-oz pkg. frozen shelled deveined cooked small shrimp, thawed, drained
2 - 9-oz. pkgs. frozen spinach, thawed, squeezed
2 - 8-oz. pkgs. salad-style imitation crabmeat, chopped
8 oz shredded Swiss cheese
2 oz shredded fresh Parmesan cheese
Fresh dill, if desired
Cook lasagna or use no bake (adding more liquid). Drain. Spread 1/2 cup Alfredo sauce in bottom of ungreased 13x9-inch baking dish. Top with 3 noodles. In med. bowl, combine shrimp, 1 pkg spinach and 1 cup of Alfredo sauce; mix well. Spoon half of shrimp mixture over noodles; spread evenly. Sprinkle with 2/3 cup of the Swiss cheese. In another med. bowl, combine crabmeat, 1 pkg spinach and 1 cup of Alfredo sauce; mix well. Spoon crabmeat mixture over cheese; spread evenly. Top with 3 noodles. Top with remaining shrimp mixture, 2/3 cup Swiss cheese, remaining noodles and any remaining Alfredo sauce. Cover tightly with foil. Bake at 350°F. for 50 to 60 minutes or until hot and bubbly. Remove from oven; sprinkle with remaining 2/3 cup Swiss cheese and Parmesan cheese. Bake 5 to 7 min. or until cheese is melted. Let stand 10 minutes before serving. Garnish with fresh dill.

Chicken Casserole
3 boneless, skinless chicken breasts
1 pkg. of chicken stuffing
1 can cream of chicken soup
1 stick of margarine
1 8oz sour cream
Boil and shred chicken breasts. Melt stick of butter and mix with stuffing. Combine the soup and sour cream in another bowl. In a large casserole dish, layer all but 1 cup of the stuffing, then the shredded chicken, and then the soup mix. Spinkle the remaining stuffing on top. Bake at 350 degrees for 35 minutes.

Irish Creme Dessert Cups
Purchase chocolate dessert cups from Tuesday Morning some time in November then purchase small bottle of your favorite Irish Creme, Regular, Carmel, or Chocolate Mint. Set out the choco cups on a nice serving tray and fill with your favorite Irish Creme. Voila!
